Butter Chicken



 This would have to be one of our family favourites for a warming family meal.  My son has made this one for me with white rice, but I'm definitely not going to complain.  It tastes so delicious.  Each time we cook this, we use a little more chicken, so there are always leftovers for someones lunch the next day.  
You can modify according to your families tastes.  ie. a little less curry when making the sauce if they don't like things spicy.  You could also add a tin of tomatoes instead of using fresh tomatoes to save a little time and make less mess.  As pictured above, it even works and still tastes great, without that final tablespoon of butter doesn't it Adam?  Both of us often forget this step at the end ;).
Ingredients
For the Chicken & Marinade 
1 kg chicken breast or boneless thigh fillets
2 tbsp. freshly squeezed lemon juice
2 garlic gloves, crushed
1 heaped tsp. of your favourite curry blend/garam marsala
¼ tsp. Himalayan salt
For the Sauce 
¼ cup coconut oil
1 medium – large brown onion, finely chopped
Approx. 3 large cloves of garlic, roughly chopped
1 tbsp. your favourite curry blend/garam marsala
¼ tsp. cinnamon
A pinch of ground cloves
A pinch of Himalayan salt
4 medium tomatoes, diced
¾ cup coconut cream
1 tbsp. lemon juice
1 dessertspoon butter
Fresh Coriander for garnishing
Method
Marinade first:  
Cut chicken into 2cm cubes and place in a shallow dish.  Add to this the remaining marinade ingredients and massage into the chicken.  Set aside while you prepare the sauce or marinate in the fridge overnight.
Next for the sauce: 
Heat the coconut oil on a medium/low heat in a large non-stick pan. Add onions and gently cook until they are golden, around 15 minutes. Reduce heat to low if they are starting to brown.  You don’t want them crispy. Just translucent to golden.  Add the garlic and cook for approx. 1 minute.  Next stir in the curry blend, cinnamon, cloves and salt, and cook for 1 more minute. Chopped tomatoes are next to be added, cooking for approx. 2 minutes before adding the coconut cream and bringing to a gentle simmer.
Lastly add the chicken to the sauce, loosely cover and gently simmer on a medium/low heat for approx. 15 minutes until cooked through. Check and ensure they are not pink inside for breasts. Final step is to stir in lemon juice and butter just before serving.  Serve with brown rice and garnish with coriander.

Lentil, Quinoa, Bean & Pumpkin Soup

As our days here in Australia are slowly getting cooler, there is nothing more satisfying than a tasty homemade soup.  Yes it's real easy to just crack open a can or packet of soup, but all up as I played in the kitchen on a lazy Sunday, not rushing at all, this took about 45 minutes to prepare.  Some times it's just worth it.  You're worth the effort and so are your family and friends.

Ingredients
2 tbs. coconut oil
1 onion (finely diced)
1/2 to 1 tbs. fav. curry blend
600g pumpkin 
Approx. 250 g sweet potato
600ml vegetable stock 
Pepper & a pinch of Himalayan salt 
1 cup lentil, quinoa & bean soup mix*

Method
Finely dice the onion and set aside.  Peel and dice the pumpkin and sweet potato.
In a large pot, gently cook the onion in the coconut oil until it becomes a light golden colour.  Add the curry blend and cook for just a minute.  Then add the pumpkin, sweet potato and vegetable stock, cover and simmer on a low heat for about 30 minutes, or until the vegetables are soft.
In a separate pot, cook the soup mix as per the instructions on the pack, depending on the mix used. * Drain once cooked and set aside.
Then once your vegetables are soft, using a stick blender and in the same pot to save on washing up, blend until smooth.  Have a little taste at this point and add just a little salt and or pepper to your liking.
Serve up, spooning some of the soup mix into the centre, with a little fresh parsley for garnish.
*I used a McKenzie's Superblend Protein.  Lentils or other soup mix would work fine too.  Just make sure you follow the instructions on the pack whatever you use.

Peanut Butter Fudge

An extra special bonus was found in my freezer this afternoon, with a couple of pieces of this fudge left there in a container from last month.  The perfect little snack to have on stand-by, so I thought I'd share since it's so easy to make. You'll get about 12 squares and I think my left overs had been there just over a month and still it tasted delicious.

Ingredients
12 medjool dates (pitted)
1 cup natural peanut butter
pinch Himalayan salt

Method
Place the dates into a food processor and blend until they're quite fine, almost a paste on their own.  Then add the natural peanut butter and the salt  and blend until the mixture turns into a ball.  Press out into a slice tin lined with baking paper and pop into the freezer.

Freeze for about 2 hours before cutting it into squares to serve. It's best to cut the whole quantity while it's still frozen and place it into the fridge for a couple of hours before sharing.  Any leftovers will last a week in the fridge, or up to a month in the freezer.  Just make sure your container is airtight, or it will get a little freezer burn happening.  Still taste fine, but will look a little less appealing.

Shaz's Raw Chocolate

This recipe works best when made in small batches. It can be made with double the quantities listed here, but separation may occur and they may not look as good. There's less chance of the ingredients separating when done as listed below.
You may wish to double quantities for sharing purposes of course, but we eat with our eyes, so why not have them all look as amazing as they taste.  Have a play! Food is Fun!

Ingredients
1/3 cup cacao butter
1/3 cup coconut oil
Just under 1/4 cup raw cacao powder
2 tbsp. pure maple syrup

Method
Place the cacao butter and coconut oil in a glass bowl over a saucepan of gently simmering water.  Gentle is the key here, so we keep all the nutritional benefits. Raw Cacao is really quite good for us, as is the coconut oil.  Stir until just melted.  If the coconut oil is already in its melted form, add it after melting the cacao butter and then blend together well.
Sift in the cacao powder and blend through.  Then add the maple syrup, 1 tbsp. at a time, stirring well.
Spoon into chocolate moulds or mini foil cups and get into the freezer to set straight away. Store them in the freezer or fridge in an airtight container, as they do melt fairly quickly in a warm environment.
I like to sprinkle a little Himalayan salt over mine before setting in the freezer.  Being just a little more creative, and taking just a little more time, you can spoon in a little chocolate into the moulds and set this in the freezer.  Then add a little organic peanut butter and a sprinkle of salt.  Top off with chocolate to finish and freeze again until set.  Raw nuts and dried fruit can also be added here, just make sure they're chopped well.
